Mocha Cupcakes with Espresso Buttercream

Best Sprouts EVER!

I made these a while ago after we had them on holiday in California and they truly are amazing…

Sprouts, cut in half and roasted in a little oil for 20-30 minutes on 180c

2 tbsp Soy sauce

1 tsp sugar

2 tbsp apple/cider vinegar

boil the soy, sugar and vinegar in a small pan until reduced by half, check flavours. Stir into the sprouts once cooked.

Hot Raspberry Sauce and ice-cream

After the news that everyone should be eating at least 7 portions of fruit and veg a day and not 5 we have been consciously trying in our house to see if we can achieve it…. today we managed 8!

12oz. frozen raspberries

1/3 cup sugar

1/4 cup water

organic vanilla ice cream

Put the raspberries, sugar and water in a sauce pan and slowly bring to the boil until they are completely melted.

Pour over really good vanilla ice-cream, and meringues if you have some… eat before the ice-cream melts!

Chicken and Mushrooms in red wine sauce

We had this for dinner and it was ready in 30 minutes, fab quick and very tasty:

Served with:

Left over carrot, swede and potato mash; 6 small/med carrots, 1/2 swede, 3 med potatoes. Boil together until soft, mash and add a little cream and butter.

Buttered broccoli

Crispy sautéed potatoes; 2 baking potatoes cut into cm size chunks, fried in a couple of tablespoons of oil at a high heat to crisp the outsides. keep flipping/stirring so they don’t burn.

Turkey and Cranberry Burgers

Leftover roast turkey blitz in food processor

slice of bread, made into breadcurmbs

a little milk

1 small egg

handful of dried cranberries, chopped

tablespoon cranberry sauce

onion, finely chopped


Fry the onion in the oil until soft.

Meanwhile soak the breadcrumbs in a little milk until soft. Mix with the turkey, egg, cranberries, cranberry sauce and seasoning. Add the onion once cooked and cooled a little. Shape into small burger patties and refrigerate for about 30 mins or until needed.

Fry the burgers in oil until browned on both sides.

Delicious in a bun with avocado and lettuce, with sweet potato fries.

OR make into small meat balls and serve with pasta and tomato sauce :o)
