Yoghurt Cake (coconut and lime)

Adapted this from a recipe I saw on netmums and liked that the ingredients are weighed out using only a yogurt pot.

  • 1 drop vanilla essence (optional)
  • 3 eggs
  • 2 yoghurt pots caster sugar
  • 2 1/2 yoghurt pots self-raising flour sieved
  • 1/2 yoghurt pot desiccated coconut
  • 1 yoghurt pot of oil
  • 125g coconut yoghurt (use the pot to measure out other ingredients)
  • zest of lime
  1. In a large mixing bowl, mix the wet ingredients, then add the dry.
  2. Place in a greased and lined loaf tin
  3. Bake for 40 minutes at 180C / gas mark 4
  4. Top if required with juice of lime mixed with a little extra caster sugar to make a drizzle topping.

Could use only flour and no coconut, plain yoghurt and chocolate chips. It was a light moist cake and did not miss the butter.

These burgers were delicious, served on toasted brioche with home made sweet potato chips.

I didn’t have any mustard so left it out.

Aubergine Bake

  • 2 aubergines
  • 1 ball mozzarella
  • 400g tin chopped tomatoes
  • handful chopped fresh parsley
  • dried oregano
  • 1/2 jar of Pepperonata, optional
  • pinch sugar

Slice the aubergine (pound coin thickness), fry in batches and pat dry.

Layer the aubergine in a baking dish, pour over the tin of tomatoes, herbs and sugar. Also I added 1/2 jar of Pepperonata.
Lay the sliced mozzarella over the top and bake on 200c for about 20 minutes.
This would be lovely served with smoked mackerel or fresh bbq mackerel, salad and new potatoes.

Coconut Fish Curry

  • tablespoon vegetable oil
  • 3 fillets tilapia, chopped into bite sized pieces
  • salt
  • teaspoon turmeric
  • onion, sliced
  • 1 red chilli, chopped
  • thumb size piece of fresh root ginger, cut into matchsticks
  • pinch of ground cumin
  • 1 x 400 ml tin reduced fat coconut milk
  • teaspoons tamarind
  • 2 teaspoons curry paste
  • 2 tablespoons plain yogurt

Heat the oil in a wok and cook onion until soft. Add chilli, ginger, turmeric and cumin and cook for a few minutes.

Add the coconut milk, tamarind and curry paste to the wok and just a little water to rinse out the coconut milk tin.

Bring to the boil and simmer for a few minutes.

When ready to serve stir in the fish and yogurt and cook for a few minutes until the fish is cooked through.

Serve in a bowl with rice on the side.

Best Sprouts EVER!

I made these a while ago after we had them on holiday in California and they truly are amazing…

Sprouts, cut in half and roasted in a little oil for 20-30 minutes on 180c

2 tbsp Soy sauce

1 tsp sugar

2 tbsp apple/cider vinegar

boil the soy, sugar and vinegar in a small pan until reduced by half, check flavours. Stir into the sprouts once cooked.

Hot Raspberry Sauce and ice-cream

After the news that everyone should be eating at least 7 portions of fruit and veg a day and not 5 we have been consciously trying in our house to see if we can achieve it…. today we managed 8!

12oz. frozen raspberries

1/3 cup sugar

1/4 cup water

organic vanilla ice cream

Put the raspberries, sugar and water in a sauce pan and slowly bring to the boil until they are completely melted.

Pour over really good vanilla ice-cream, and meringues if you have some… eat before the ice-cream melts!
