These burgers were delicious, served on toasted brioche with home made sweet potato chips.

I didn’t have any mustard so left it out.

Aubergine Bake

  • 2 aubergines
  • 1 ball mozzarella
  • 400g tin chopped tomatoes
  • handful chopped fresh parsley
  • dried oregano
  • 1/2 jar of Pepperonata, optional
  • pinch sugar

Slice the aubergine (pound coin thickness), fry in batches and pat dry.

Layer the aubergine in a baking dish, pour over the tin of tomatoes, herbs and sugar. Also I added 1/2 jar of Pepperonata.
Lay the sliced mozzarella over the top and bake on 200c for about 20 minutes.
This would be lovely served with smoked mackerel or fresh bbq mackerel, salad and new potatoes.

Coconut Fish Curry

  • tablespoon vegetable oil
  • 3 fillets tilapia, chopped into bite sized pieces
  • salt
  • teaspoon turmeric
  • onion, sliced
  • 1 red chilli, chopped
  • thumb size piece of fresh root ginger, cut into matchsticks
  • pinch of ground cumin
  • 1 x 400 ml tin reduced fat coconut milk
  • teaspoons tamarind
  • 2 teaspoons curry paste
  • 2 tablespoons plain yogurt

Heat the oil in a wok and cook onion until soft. Add chilli, ginger, turmeric and cumin and cook for a few minutes.

Add the coconut milk, tamarind and curry paste to the wok and just a little water to rinse out the coconut milk tin.

Bring to the boil and simmer for a few minutes.

When ready to serve stir in the fish and yogurt and cook for a few minutes until the fish is cooked through.

Serve in a bowl with rice on the side.

Chicken and Mushrooms in red wine sauce

Also super low calorie!

Served with:

Left over carrot, swede and potato mash; 6 small/med carrots, 1/2 swede, 3 med potatoes. Boil together until soft, mash and add a little cream and butter.

Buttered broccoli

Crispy sautéed potatoes; 2 baking potatoes cut into cm size chunks, fried in a couple of tablespoons of oil at a high heat to crisp the outsides. keep flipping/stirring so they don’t burn.

Turkey and Cranberry Burgers

Leftover roast turkey blitz in food processor

slice of bread, made into breadcurmbs

a little milk

1 small egg

handful of dried cranberries, chopped

tablespoon cranberry sauce

onion, finely chopped

oil

Fry the onion in the oil until soft.

Meanwhile soak the breadcrumbs in a little milk until soft. Mix with the turkey, egg, cranberries, cranberry sauce and seasoning. Add the onion once cooked and cooled a little. Shape into small burger patties and refrigerate for about 30 mins or until needed.

Fry the burgers in oil until browned on both sides.

Delicious in a bun with avocado and lettuce, with sweet potato fries.

OR make into small meat balls and serve with pasta and tomato sauce :o)

Breaded Salmon Finger Sandwich with home made Tartare sauce

2 Salmon Fillets each cut into 4 long finger shapes

1 egg, beat

breadcrumbs (approx 2 slices bread)

little flour

olive oil for shallow frying

Dip the salmon in flour, then egg, then breadcrumbs. Shallow fry about 4 at a time depending on the size of the pan. When golden take out and dry off on kitchen paper.

Meanwhile make the Tartare Sauce

2 tablespoons mayonaise

1 teaspoon chopped capers

1 tablespoon chopped pickles

a few sprigs of fresh chopped dill

Mix all the ingredients together.

Serve the salmon fingers in toasted brioche buns with the Tartare sauce, shredded lettuce and some home made chips.

Home made beans and wedges

Recipe below from BBC Good Food:

  • 1 tsp oil
  • 1 onion, halved and thinly sliced
  • 2 rashers streaky bacon, cut into large-ish pieces
  • 1 tsp sugar, brown if you have it
  • 400g can chopped tomatoes
  • 200ml stock from a cube
  • 410g can cannellini beans, butter or haricot beans in water

For the wedges

  • 1 tbsp white flour (plain or self-raising)
  • ½ tsp cayenne pepper, paprika or mild chilli powder
  • 1 tsp dried mixed herb (optional)
  • 2 baking potatoes, each cut into 8 wedges
  • 2 tsp oil
  1. Heat oven to 200C/fan 180C/gas 6. For the wedges, mix the flour, cayenne and herbs (if using), add some salt and pepper, then toss with the potatoes and oil until well coated. Tip into a roasting tin, then bake for about 35 mins until crisp and cooked through.
  2. Meanwhile, heat the oil in a non-stick pan, then gently fry the onion and bacon together for 5-10 mins until the onions are softened and just starting to turn golden. Stir in the sugar, tomatoes, stock and seasoning to taste, then simmer the sauce for 5 mins. Add the beans, then simmer for another 5 mins until the sauce has thickened. Serve with the wedges.

It was lovely… however a little too much tin tomato flavour… added a slug of BBQ sauce, pinch of Chinese 5 spice and a little chilli powder and it was much better. Next time I will be roasting up some belly pork to pop in it as the bacon just wasn’t enough! OR leave out the pork/bacon for vegetarian option.

Boeuf Bourguingnon

Was as good as I had hoped, real comfort food on a cold Sunday evening.

I didn’t make the bread dumplings as forgot to defrost the stale bread but I did make suet dumplings which I LOVE!

1 cup self-raising flour (if you don’t live in UK recipe can be found on here too)

1/2 cup suet

1/2 tsp dry thyme

seasoning

Mix all the ingredients together adding just enough water to make it bind together. Drop teaspoons full into the dish 30 mins before the end and leave the lid off so the tops go crispy!

Crab & Prawn Mascarpone Pasta

Followed Linda’s recipe exactly and garnished with flash fried king prawns in olive oil. It was amazing, and my girls loved it too, very pleased and will definitely be making it again.
