Aubergine Bake

  • 2 aubergines
  • 1 ball mozzarella
  • 400g tin chopped tomatoes
  • handful chopped fresh parsley
  • dried oregano
  • 1/2 jar of Pepperonata, optional
  • pinch sugar

Slice the aubergine (pound coin thickness), fry in batches and pat dry.

Layer the aubergine in a baking dish, pour over the tin of tomatoes, herbs and sugar. Also I added 1/2 jar of Pepperonata.
Lay the sliced mozzarella over the top and bake on 200c for about 20 minutes.
This would be lovely served with smoked mackerel or fresh bbq mackerel, salad and new potatoes.

Chicken and Aubergine Stew

  • 2 chicken breasts
  • splash oliveoil
  • 1 onion 
  • 2 aubergines
  • 3 small red peppers
  • 1 x 400 g canned chopped tomatoes
  • 125 ml white wine
  • 1 tsp dried oregano
  • 1 tsp sugar
  • salt and pepper
  • splash water

Cut the Onion, Aubergine, and Red Peppers into big chunks, place in a roasting tray and drizzle with olive oil and a little salt. Roast at 180c for approx 20 mins until soft.

Transfer veg into a saucepan, add tomatoes, wine, oregano, sugar, pepper and a splash of water, bring to the boil.

Cut the chicken breasts into bite sized pieces and add them to the stew. Turn down the heat to its lowest setting and cook for 1-2 hours.

Serve with rice.
