Pineapple & Ginger Smoothie

After finding the delicious recipe for No Bake Bites on http://gimmesomeoven.com/ I was checking out all their other lovely looking recipes and found this. The girls and I had them for breakfast, they did not approve 😦 I however thought they were yummy…

1 1/2 cups diced fresh pineapple (I used some I had frozen so omitted the ice)
1 banana
1/2 cup plain yogurt
1 Tbsp. grated fresh ginger
1/2 cup ice
1/2 cup pineapple juice or water

Blitz in the blender, serve 🙂

Banana Bread

This recipe is fab it uses 6-7 bananas which if you have a whole bunch past their best, or like me you put them in the freezer for another day and end up with LOADS!

250g plain flour
1 tsp bicarbonate of soda
pinch salt
115g butter
115g sugar
2 eggs, beaten
6-7 / 500g mashed over-ripe bananas
Preheat the oven to 180 C.
Lightly grease a 23x13cm loaf tin.
In a large bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Add flour, bicarbonate of soda and salt to the banana mixture and stir just enough to get rid of lumps. Pour the mixture into the loaf tin.
Bake in preheated oven for 55 to 65 minutes, until a knife inserted into centre of the loaf comes out clean. Leave to cool in tin for 10 minutes, then turn out onto a wire cooling rack. Best eaten warm!

Banana Muffins

200g (7 oz) plain flour
1/2 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
3 large bananas, mashed
150g (5 oz) caster sugar
1 egg
75g (2 1/2 oz) butter, melted

Preheat the oven to 180 C / Gas 4. Place 12 paper baking cases in a muffin tin.

Sift together the flour, baking powder, bicarbonate of soda and salt; set aside.

Combine mashed bananas, sugar, egg and melted butter in a large bowl. Fold in flour mixture, and mix until smooth.

Spoon evenly into baking cases in muffin tin.

Bake in preheated oven for 25 to 30 minutes or until muffins spring back when lightly tapped.
