Yoghurt Cake (coconut and lime)

Adapted this from a recipe I saw on netmums and liked that the ingredients are weighed out using only a yogurt pot.

  • 1 drop vanilla essence (optional)
  • 3 eggs
  • 2 yoghurt pots caster sugar
  • 2 1/2 yoghurt pots self-raising flour sieved
  • 1/2 yoghurt pot desiccated coconut
  • 1 yoghurt pot of oil
  • 125g coconut yoghurt (use the pot to measure out other ingredients)
  • zest of lime
  1. In a large mixing bowl, mix the wet ingredients, then add the dry.
  2. Place in a greased and lined loaf tin
  3. Bake for 40 minutes at 180C / gas mark 4
  4. Top if required with juice of lime mixed with a little extra caster sugar to make a drizzle topping.

Could use only flour and no coconut, plain yoghurt and chocolate chips. It was a light moist cake and did not miss the butter.

This is delicious, it was good as a cake and as cupcakes. I topped mine off with a tub of coconut cream, mixed in the food processor with a little maple syrup and vanilla essence. So dairy free too!!!

Banana Bread

This recipe is fab it uses 6-7 bananas which if you have a whole bunch past their best, or like me you put them in the freezer for another day and end up with LOADS!

250g plain flour
1 tsp bicarbonate of soda
pinch salt
115g butter
115g sugar
2 eggs, beaten
6-7 / 500g mashed over-ripe bananas
Preheat the oven to 180 C.
Lightly grease a 23x13cm loaf tin.
In a large bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Add flour, bicarbonate of soda and salt to the banana mixture and stir just enough to get rid of lumps. Pour the mixture into the loaf tin.
Bake in preheated oven for 55 to 65 minutes, until a knife inserted into centre of the loaf comes out clean. Leave to cool in tin for 10 minutes, then turn out onto a wire cooling rack. Best eaten warm!

Classic Victoria Sandwich Cake

3 large eggs
175g (6oz) of softened butter
175g (6oz) of caster sugar
175g (6 oz) of self-raising flour 
1½ teaspoons of baking powder. 
2 x 18 cm (7 in) greased and lined sandwich tins
1 tablespoon milk

whipped cream
jar of strawberry jam

Pre-heat the oven to 180°C/Fan 160°C/gas 4. Grease two sandwich tins then line the base of each tin with baking parchment.

Measure the butter, sugar, eggs, flour and baking powder into a large bowl and beat until thoroughly blended. Divide the mixture evenly between the tins and level out.

Bake in the pre-heated oven for about 25 minutes or until well risen and the tops of the cakes spring back when lightly pressed with a finger. Leave to cool in the tins for a few minutes then turn out, peel off the parchment and finish cooling on a wire rack.

When completely cold, sandwich the cakes together with the cream and jam. Sprinkle with caster sugar to serve.

Banana Muffins

200g (7 oz) plain flour
1/2 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
3 large bananas, mashed
150g (5 oz) caster sugar
1 egg
75g (2 1/2 oz) butter, melted

Preheat the oven to 180 C / Gas 4. Place 12 paper baking cases in a muffin tin.

Sift together the flour, baking powder, bicarbonate of soda and salt; set aside.

Combine mashed bananas, sugar, egg and melted butter in a large bowl. Fold in flour mixture, and mix until smooth.

Spoon evenly into baking cases in muffin tin.

Bake in preheated oven for 25 to 30 minutes or until muffins spring back when lightly tapped.

Chocolate Cornflake Cakes

50g / 3 1/2 tablespoons butter
60ml / 4 tablespoons golden syrup
110g / 4 oz milk chocolate, chopped
75g / 2 3/4 cups cornflakes

In a saucepan over low heat, combine the butter, golden syrup and chocolate. Cook and stir until butter and chocolate have melted and everything is well blended. Mix in the cornflakes cereal. Drop by heaping spoonfuls into paper cases or a buttered baking sheet. Place in the refrigerator until set, about 15 minutes.

Crunchie Nut Cornflake Cakes

This was donated by my cousin “My Mum’s very chewy crunchie nut cornflake cakes – great for lunch boxes!”

2 oz crunchy nut 
2 oz butter
2 large table spoons of golden syrup
2 large table spoons of cadburys drinking choc

12 cake cases

Melt the butter and golden syrup together once melted remove from heat and add choc and then the crunchy nut….allow kids to spoon into cake cases …
Refrigerate and once set they are amazing!!
