Hairy Bikers Cassoulet was a huge hit in our house this weekend:

Lovely warming dish on a cold spring evening, I didn’t use any chicken and would probably add stock next time and less tinned tomatoes. Otherwise lovely, we had ours with mash potatoes and yorkshire pudding!

Boeuf Bourguingnon

Was as good as I had hoped, real comfort food on a cold Sunday evening.

I didn’t make the bread dumplings as forgot to defrost the stale bread but I did make suet dumplings which I LOVE!

1 cup self-raising flour (if you don’t live in UK recipe can be found on here too)

1/2 cup suet

1/2 tsp dry thyme


Mix all the ingredients together adding just enough water to make it bind together. Drop teaspoons full into the dish 30 mins before the end and leave the lid off so the tops go crispy!

Chicken and Aubergine Stew

  • 2 chicken breasts
  • splash oliveoil
  • 1 onion 
  • 2 aubergines
  • 3 small red peppers
  • 1 x 400 g canned chopped tomatoes
  • 125 ml white wine
  • 1 tsp dried oregano
  • 1 tsp sugar
  • salt and pepper
  • splash water

Cut the Onion, Aubergine, and Red Peppers into big chunks, place in a roasting tray and drizzle with olive oil and a little salt. Roast at 180c for approx 20 mins until soft.

Transfer veg into a saucepan, add tomatoes, wine, oregano, sugar, pepper and a splash of water, bring to the boil.

Cut the chicken breasts into bite sized pieces and add them to the stew. Turn down the heat to its lowest setting and cook for 1-2 hours.

Serve with rice.
